Once upon a time, our friends John and Alex had Mantha and I over for dinner, and we said ohhhh we should return the favor sometime, and we never did until NOW like six months later. So we made some brunch food and thought we didn’t have enough and made a bunch more. So stay tuned for the rest of the brunch recipes.
Right this second, I am on my way back from a trip to the Upper Peninsula of Michigan, where I saw some of the most beautiful things I have ever seen, including about a million water falls and some awesome cliffs and the bluest water outside of the Caribbean. It was awesome. Pumped to get back to my Chicago kitchen, tho.

Here’s what happens when you make an unconventional and scrumptious flavored version of a fantastic classic!
- 1 cup all purpose flour
- 1/3 cup white sugar
- 2 packets earl grey tea
- 1 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup Greek yogurt
- 1/3 cup buttermilk
- 2 lemons, juice & zest
- 3 Tablespoons unsalted butter, melted
- 1 egg
- 1 teaspoon vanilla
Preheat a waffle iron.
Combine the wet ingredients in a bowl.
In a separate bowl, combine the dry ingredients.
Mix together the dry and wet ingredients until just combined.
Pour approximately 1/2 cup of batter into the waffle iron. Cook as directed by waffle iron instructions. Serve with syrup and butter.
